THOUSAND ISLAND DRESSING

Use this retro dressing to kick up all of your old favs--and some new ones. Pour this Thousand Island over hearty mixed greens (iceberg, romaine, frisee), chilled halved Brussels sprouts (pre-cooked) and julienned Emmenthaler Swiss. Also spread on hot or cold sandwiches or use as a dip for seafood. Thousand Island dressing is a must for Marshall Field's-style Special Sandwiches.

One cup real mayonnaise
One-half cup chili sauce (I use Heinz)
One tablespoon sweet pickle relish
Two large green olives, pitted and finely chopped
One-half teaspoon dried tarragon
Dash Tabasco
Dash Worcestershire sauce
One hard-boiled egg, finely chopped (optional)
Salt, pepper and sugar to taste

Combine all ingredients. Refrigerate at least 30 minutes.

Yield: One and three-fourths cups dressing
